Peel the pears and remove the seeds. Coarsely chop the pears, then layer in a screw-top jar. Add the almonds, vanilla, and the spices in between the layers of pears. Cover everything well with the Doppelkorn and seal tightly. Set aside and let infuse, shaking once per day.
After 10 days have passed, create a syrup by cooking 1 quart of water with the sugar. Remove the syrup from the heat, then pour into the jar. Seal the jar tightly and let infuse another 10 days. Continue to shake the contents of the jar once per day. After the aging time has elapsed, strain the liquid into a clean bottle and seal tightly.
