200 grams softened butter
150 grams sugar
3 eggs (separated)
1 organic lemon (zested)
1 pinch salt
2 teaspoons ground Anise seed
1 tablespoon Rum
100 grams ground almonds
200 grams Pastry flour

Preparation steps

1.

Beat the butter until creamy. Gradually add the sugar, egg yolks, lemon zest, salt, ground anise and rum to the butter, and mix well. Mix the ground almonds with the flour and fold into the butter mixture to form a smooth batter. Beat the egg whites with a pinch of salt until stiff and fold into the batter.

Line two baking trays with parchment paper.

Pour the batter into a piping bag with a small nozzle and squirt the batter in small piles on the baking trays. Bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for 10-15 minutes.

Remove the trays from the oven and let the cookies cool. Sprinkle the cookies with powdered sugar.
