160 grams egg whites (5-6 eggs)
½ tsp cream of tartar (from the health food store)
¼ tsp salt
150 grams fine sugar
90 grams Pastry flour
1 tsp real Bourbon vanilla
powdered sugar (for dusting)
1 bottle Chocolate sauce

Preparation steps

1.

Preheat oven to 175°C (approximately 350°F) . Beat the egg whites until foamy. Add the baking powder and salt and continue beating. Gradually sprinkle in about 50 grams (approximately 1/4 cup) of sugar. Add 1 tablespoon of cold water and fold in.

Combine the remaining 100 grams (approximately 1/2 cup) of sugar with the flour and the Bourbon vanilla. Sprinkle gradually over the egg whites and fold in loosely. Pour the mixture immediately into the pan (Angel Food Cake pan or nonstick wreath pan). Bake for about 30 minutes.

Place the cake upside down on a wire rack or allow to cool in the pan. Carefully remove the cake from the pan. Serve dusted with powdered sugar. Slices of cake can also be served with plum compote or chocolate sauce.
