Ingredients

2 ⅔ cups
white chocolate (chopped)
¼ cup
double cream (48% fat)
2 tablespoons

Preparation steps

1.
Put 300g of the chocolate into a bowl. Heat the cream until nearly boiling and pour onto the chocolate. Add the liqueur and stir very well together until smooth and velvety. Cover and chill for 2 hours or until firm enough to handle.

Line a baking tray with baking parchment. Scoop up a teaspoonful of mixture and quickly roll into a ball. Place on the lined tray. When all the truffles are made return to the fridge for a further hour until very firm.
3.
Melt the remaining chocolate in the microwave or in a bowl over a pan of hot, but not boiling water. Remove and allow to cool slightly until of a coating consistency. Using a fork dip each truffle into the chocolate. Gently tap the fork on the side of the bowl to remove excess chocolate.
4.
Place the dipped truffles on a clean sheet of baking parchment and leave to set.
