In addition to the alcohol-free Amaretto, the ground almonds provide the very special aroma; moreover, the almonds convince with the contained vitamin E, which offers cell protection as an antioxidant. Thus the skin retains a young and beautiful appearance. The kernels are also good suppliers of vegetable protein, which is used as a building material in the body.

The Amaretto almond cookies like it cool, dry and dark, at best in a tin with a lid. Stored in this way, they stay fresh and crispy for several weeks.

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

In the bowl of an electric mixer, beat the butter with the sugar until light and fluffy. Beat in the egg and the Amaretto. In a bowl, stir together the flour, ground almonds and baking powder and stir into the egg mixture. If the mixture is runny, add some more ground almonds. With moistened hands, form small balls and place 2 inches apart on the baking sheet. Place two almonds in the middle of each, pressing down slightly and bake until golden brown and set,  10-15 minutes. Cool 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
