Amaranth Anise Cookies
Mix flour, sugar, amaranth, baking powder, salt and anise seed and mound on work surface. Cut cold butter into pieces and place around flour mixture. Press a well into center of flour mixture and pour in honey and egg. Stir mixture outward from the center with a fork, then use a dough scraper to cut butter into mixture until crumbly.
Quickly knead mixture into a smooth dough. Form dough into an elongated log, wrap in plastic wrap and refrigerate at least 30 minutes. Preheat oven to 160°C (approximately 325°F). Remove plastic wrap from dough and cut dough with a large knife into slices about 1.5 cm (about 1/3 inch) thick.
Place dough slices on a baking sheet lined with parchment paper and bake 15-20 minutes. The cookies will be soft after baking and will harden as they cool.
