Alsatian-Style Sausage with Sauerkraut
Peel and finely dice onions and garlic. In a heavy pot, fry onions and garlic in lard until golden-brown. Peel, core and finely chop apples. Add apples and half sauerkraut to pot. Add Kassler and sprinkle in spices. Spoon remaining sauerkraut on top. Pour in wine and 100 ml (approximately 1/2 cup) water.
Cover pot simmer about 1 1/2 hours. Rinse and peel potatoes. Halve or quarter potatoes and add to the pot along with sausages; cook 30 minutes more. Remove Kassel and sausages, cut into serving pieces and serve with sauerkraut and potatoes on the side.
