Alsatian Ham and Onion Flatbread

Pre-heat the oven to 240°C | 475F | gas 9.
Heat the butter and oil together in a saute pan over a medium heat and gently fry the onions for 7-8 minutes. Remove from the pan and drain on kitchen paper.
In a blender, combine the crème fraiche and cottage cheese and puree until smooth. Transfer to a bowl and reserve to one side.
Roll the dough into a rectangle on a lightly floured surface to fit a 17 inch x 12 inch lined jelly roll pan.
Arrange the blended mixture on the top, pushing nearly to the edges and then scatter over the cooked onions.
Arrange the pieces of bacon on top and bake in the oven 10-12 minutes until the dough is cooked and the bacon is crispy. Serve immediately.
