Ingredients

For the dumplings
4 marrow bone
4 slices Toast
breadcrumbs (as needed)
2 eggs
½ bunch parsley
salt
freshly ground peppers
For the soup
1 liter clear Beef broth
100 grams Alphabet noodle
1 zucchini
2 carrots
150 grams Cauliflower
150 grams Peas (frozen)
Basil (for garnish)

Preparation steps

For the dumplings: Bring a pot of salted water to a boil.

Loosen beef marrow from the bone. Remove crusts from bread and finely dice bread and combine with eggs and chopped parsley. Add finely chopped marrow, season with salt and pepper and mix until smooth. Add breadcrumbs as needed, so that the mixture is malleable. Shape dumplings into 2-3 cm (approximately 1-inch) balls. Simmer in salted boiling water for about 15 minutes, then remove and set aside.

For the soup: Bring the salted water back to a boil and cook pasta until al dente. Remove, rinse and drain.

Bring broth to a boil.

Rinse, trim and chop zucchini into small cubes.

Peel carrots and chop into small cubes. Rinse and trim cauliflower and chop into small pieces.

Add vegetables to boiling broth and cook over low heat for about 5-6 minutes. Add pasta and dumplings to warm through and season with salt and pepper. Divide among bowls, garnish with basil and serve.
