150 grams butter
75 grams fine sugar
80 grams blanched, ground almonds
200 grams Pastry flour
1 pinch salt
50 grams Bourbon vanilla powder
2 tablespoons powdered sugar

Preparation steps

In a bowl, cut the butter into the sugar, salt, flour and almonds until crumbly. Use hands to shape into a smooth dough. Shape into a disk, wrap in plastic wrap and refrigerate overnight.

Preheat the oven to 190°C (approximately 375°F).

Divide the dough into portions. Shape each portion into a log. Cut into 4 cm (approximately 1 1/2 inch) pieces. Shape into log ropes, taper the edges and curve into a crescent shape, almost like a croissant. Place on a parchment-lined baking sheet and bake for 12 minutes. Remove and allow to cool for a few minutes. 

In a bowl, stir the vanilla sugar with the powdered sugar. Coat the crescents in the sugar mixture. Place on a wire wrap and allow to cool completely.
