250 grams Pastry flour
1 teaspoon Baking powder
60 grams sugar
1 pinch salt
2 eggs
1 tablespoon Cognac
150 grams cold butter
For the filling
150 grams softened butter
150 grams sugar
2 egg yolks
150 grams ground almonds
100 grams chopped almonds
2 tablespoons Pastry flour
1 tablespoon cornstarch
4 egg whites
250 grams Apricot jam
also
1 Muffin tin (with 12 wells)
butter (for baking sheet)
slivered almonds
powdered sugar

Preparation steps

For the dough, mix flour and baking powder in a bowl. Make a well in the center. Pour sugar, salt, eggs and cognac into the well, add chopped butter and knead everything quickly into a smooth dough. Wrap in plastic wrap and chill for about 1 hour.

For the filling, beat the butter with sugar until creamy. Stir in egg yolks, ground almonds, chopped almonds, flour and cornstarch. Beat egg white until stiff and very carefully fold into the egg yolk mixture.

Roll out dough thinly between 2 sheets of parchment paper.

Grease muffin tin with butter and line with dough. Warm the apricot jam in a saucepan, stir until smooth and strain through a sieve.

Brush the dough with the jam and top with almond mixture. Cut the remaining dough into about 1 cm (approximately 1/2-inch) wide strips and drape over the muffins crosswise. Bake in a preheated oven at 180°C (approximately 350°F) for 20 minutes. Remove tarts from the tin and allow to cool. To taste, sprinkle with toasted almonds and dust with powdered sugar.
