300 grams Pastry flour
200 grams butter
1 pinch salt
300 grams sugar
2 small eggs
240 grams almonds (chopped)
250 grams Whipped cream
2 Tbsps honey
2 Tbsps Red currant jelly
butter (for the molds)
8 Tartlet pans (10 cm or approximately 4 inch diameter)
Star cookie cutter (in different sizes)
2 Tbsps milk

Preparation steps


Cut the butter into small pieces and mix with the flour, salt and 100 grams (approximately 4 tablespoons) sugar in a chilled bowl. Make a well in the center. Beat the eggs and pour in. Quickly knead into a crumbly dough. Form a ball, cover in plastic wrap and refrigerate for 20 minutes.


Caramelize 200 grams (approximately 8 tablespoons) sugar in a dry pan until light brown while stirring. Add the almonds and cook for 2-3 minutes more. Stir in the cream. Once the sugar has dissolved, stir in the honey. Roll out 2/3 of the dough to 3 mm (approximately 1/8 inch) thick. Preheat the oven to 180°C (approximately 350°F). Grease the tart molds. Cut out 8 round dough bases 12 cm (approximately 5 inches) in diameter and place in the molds, forming an edge.


Brush the dough bases with redcurrant jam. Distribute the caramelized almonds evenly over the dough. Roll out the rest of the dough as thin as possible and cut out stars of various sizes. Place on the nut filling. Brush the stars with some milk. Bake the tartlets on the middle rack of the preheated oven for 30 minutes. Cover with aluminum foil if the tartlets are browning too quickly. Let cool and serve on plates or packaged as a gift.
