Preparation steps

Bring the milk, 200 ml (approximately 3/4 cup) water and the agar to a boil, reduce the heat and simmer for 2-3 minutes. Remove from the heat, stir in the almond extract and then transfer the mixture to a baking dish so that the mixture is around 2 cm (approximately 3/4 inch) thick. Chill until solidified.

Bring the sugar and 250 ml (approximately 1 cup) water to a boil then remove from the heat. Transfer to a shallow dish, let cool and then refrigerate.

To serve, cut the almond jelly into small diamonds, arrange decoratively in a serving bowl and pour the syrup over top.
