Preparation steps

Crumble the marzipan in a large bowl and mix with the sugar and 1 egg white until smooth.

Beat the remaining egg whites until stiff, sprinkle a pinch of salt and continue beating. Fold the beaten egg whites into the marzipan mixture. Stir in the almonds, flour and cinnamon, and knead to a firm, moist dough. Cover the bowl with aluminum foil and chill the dough overnight in the refrigerator.

Sprinkle the work surface with granulated sugar. Divide the dough in portions and roll out each portion to about 4-5 mm thick. Also sprinkle the rolled dough surface with sugar. Cut out stars from the rolled dough and place baking sheet lined with parchment paper. Bake in a preheated oven at 160°C (fan: 140°C, gas mark 2) (approximately 320°F) for 15-20 minutes. \

Take out the baking sheet from the oven and let the stars cool on a wire rack. Serve.
