Almond-Honey Crescent Cookies
Combine the pastry flour, sugar, vanilla sugar, 50 grams of honey, ground almonds and egg in a large bowl. Distribute the butter over the top and mix everything together using a pastry cutter or two forks. Quickly knead with hands to form a smooth dough, wrap with plastic wrap and refrigerate overnight.
Preheat the oven to 175°C (approximately 350°F). Line a baking sheet with parchment paper. Divide the dough into 6 pieces and shape each piece into a 1.5 cm (approximately 1/2 inch) thick roll. Cut each roll into 7 cm (approximately 3 inch) long pieces.
Shape the dough pieces into crescents and place about 3 cm (approximately 1 inch) apart on the prepared baking sheet. Bake for 12 minutes, until golden brown. Remove from the oven, drizzle with the remaining honey and toss in the cane sugar.
