200 grams sugar

1 egg white

Preparation steps

Mix butter, sugar, salt and lemon zest until smooth. Combine the flour with the baking powder, pass through a sieve and add, alongwith the ground almonds, to the butter mixture. Add the egg, egg yolks and whites and knead everything into a smooth dough. Cover and refrigerate for 1 hour. Roll out the dough on a lightly floured surface to be about 4 mm thick (approximately 1/8 inch).

Smooth the dough with a palate. Preheat oven to 200°C (approximately 400°F). Greas a baking sheet with butter. Cut out circles from the dough by placing a medium-sized drinking glass upside down on the dough and pressing down. Place the cookies on the baking sheet and bake on the center rack of the preheated oven for about 15 minutes, or until golden brown.

Let cool on a wire rack. Mix together the powdered sugar and lemon juice to form a thick icing. Brush the cookies with it and garnish with the almonds and cherries.
