125 grams Pastry flour
1 egg yolk
1 tablespoon sugar
2 teaspoons grated Lemon peel
80 grams cold butter
4 egg whites
120 grams sugar
120 grams ground almonds
6 tablespoons slivered almonds
6 tablespoons Strawberry Jam
200 grams Whipped cream
500 grams Strawberries
2 tablespoons powdered sugar

Preparation steps

1.

Cut the butter into pieces and mix quickly with the flour, egg yolk, 1 tablespoon sugar and lemon zest. Chill the dough in the refrigerator for 30 minutes.

Then roll out the dough thinly onto a floured surface roll and cut out 6 (10 cm)(approximately 4 inch) circles place on a parchment paper-lined baking sheet. Bake in an oven preheated oven 180°C (approximately 350°F) for about 20 minutes. Remove and let cool.

Beat the egg whites until stiff, then sprinkle in the sugar stirring constantly. Fold in the ground almonds and spread on a parchment paper-lined baking sheet in 6 (10 cm) (approximately 4 inch) circles. Sprinkle with the sliced almonds and bake 20 minutes also at 180°C (approximately 350°F).

Brush the cooled cookies with strawberry jam and top with the almond circles. Beat the cream until stiff, spread over the almond cirlces and top with rinse and trimmed strawberries. Serve dusted with powdered sugar.
