120 grams softened butter
60 grams brown sugar
1 egg yolk
1 Vanilla bean (seeded)
60 grams Pastry flour
60 grams ground Hazelnuts
1 pinch salt
20 whole almonds
powdered sugar (for dusting)

Preparation steps

1.

Beat the butter, brown sugar, egg yolks and vanilla bean seeds with an electric mixer until smooth and creamy. Stir in the flour, ground hazelnuts and salt and mix until smooth and moldable. Cover and refrigerate for at least 1 hour.

Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper. 

3.

Scoop the dough with a small spoon or cookie scoop and shape into balls. Place onto the prepared baking sheet and press an almond into the center of each. Bake for 10-15 minutes, until lightly golden.

Remove from the oven, cool on a wire rack and dust with powdered sugar.
