Preparation steps

1.

For the dough, coarsely crumble the almonds. Separate the eggs. Whisk the eggs yolks until frothy. Whip the egg whites.

Beat the butter until fluffy. Stir in the sugar, cinnamon and 1 tablespoon of egg yolk. Stir in the flour.

Spread the dough on a greased pan and flatten. Spread 2 tablespoons of the egg white on the dough. Sprinkle with almonds, flatten and bake for 35-40 minutes at 160°C (approximately 325°F), until golden.

For the icing, mix the powdered sugar, lemon juice and butter. Spread on the hot cookie and let cool. Remove the cookie from the pan and cut into 2.5 cm wide strips. Cut the strips into diamonds or triangles and serve.
