200 grams Dark chocolate (70% cocoa)
200 grams Milk chocolate (30% cocoa)
100 grams butter
2 teaspoons Crème fraiche
80 grams almonds
3 eggs
200 grams brown sugar
½ teaspoon salt
180 grams Pastry flour
10 grams Baking powder
20 blanched almonds

Preparation steps

Chop 120 grams each (approximately 4 1/4 ounces) of milk chocolate and dark chocolate coarsely and melt with the butter in a heat-proof bowl placed over a pan of hot water. Stir in the creme fraiche. Remove from heat and allow to cool.

Preheat the oven to 180°C (approximately 350°F). Line a baking pan with parchment paper.

Finely chop the nuts. Beat the eggs with the sugar and salt in a bowl until light and creamy and the sugar has dissolved. Gradually stir the cooled chocolate into the egg mixture. Mix the flour with the nuts and the baking powder and stir into the batter. Pour the mixture into the baking pan and smooth. Bake the brownies 30 - 35 minutes (it will still be a little soft in the middle, so an inserted toothpick may not come out clean).

Let the brownies cool and cut into pieces (about 5 x 6 cm)(approximately 2 - 2 1/2 inches). Chop the rest of the chocolate and melt in a heat-proof bowl placed over a pan of hot water. Drizzle the melted chocolate over the brownies and garnish with the blanched almonds.
