Ingredients

For the base
500 grams Pastry flour
1 cube Yeast (42 grams) (approximately 1 1/2 ounces)
150 milliliters lukewarm milk
125 grams sugar
125 grams butter
1 pinch salt
1 organic lemon (zest)
1 egg
Pastry flour (for dusting)
For the topping
150 grams butter
150 grams sliced almonds
100 grams sugar

Preparation steps

For the base: Place the flour in a mixing bowl, make a well in the center, crumble in the yeast and mix with 5 tablespoons milk, 1 tablespoon sugar and a little flour from the edges. Cover and let rise for about 15 minutes in a warm place. Add the chopped butter, remaining milk and sugar, salt, lemon zest and egg and knead until smooth and elastic and the dough comes away from the edges of the bowl. Cover and let rise for about 45 minutes, until doubled in bulk.

Preheat the oven to 180°C (approximately 350°F) convection. Line a baking sheet with parchment paper.

Knead the dough again on a lightly floured work surface. Use to line a baking sheet, dot with butter, sprinkle with the almonds and sugar and bake for about 45 minutes.

Remove from the oven, let cool and serve cut into pieces.
