Almond and Orange Biscotti
Dry-toast the almonds and chop coarsely.
In a bowl, combine the flour, salt, baking powder, vanilla sugar and sugar. In a separate bowl, whisk together the eggs, orange zest and 1 -2 tablespoons orange juice until smooth. Mix into the dry ingredients until combined then fold in the almonds.
Grease a baking sheet. Divide the dough into 2 portions, shape into 2 (6 cm) (approximately 2 1/2 inch) flattened logs on the prepared baking sheet and brush with egg yolk.
Bake in a preheated oven (180°C) (approximately 350°F) for about 15 minutes, until lightly browned. Remove from the oven, brush with remaining orange juice and cut into 1 cm (approximately 1/3 inch) thick slices. Return to the baking sheet, spaced slightly apart, and bake for another 10-15 minutes, until the cookies are crisp.
