Almond and Jam Sandwich Cookies
Combine the flour and almonds. Melt the butter, stir in the sugar, egg and cream then mix into the dry ingredients until just combined. Cover with plastic wrap and chill for about 1 hour in the refrigerator.
Roll out the dough until about 3 mm (approximately 1/8 inch) thick on a lightly floured work surface. Cut into desired shapes then cut out small stars or hearts from the center of 1/2 the cookies. Preheat the oven to 200°C (approximately 400°F). Arrange on baking sheets lined with parchment paper and bake for about 8-10 minutes, until golden brown. Let cool on wire racks. Mix the jelly and rum together, spread over the solid cookies then sandwich together with the remaining cookies with the "windows." Let set then sprinkle with powdered sugar.
