100 grams Pastry flour
1 pinch salt
50 grams sugar
120 grams ground almonds
1 tablespoon Orange zest

1 jar Sour cherry (about 340 grams or 12 ounces)
Pastry flour (for dusting and work)
180 grams sugar
4 tablespoons Whipped cream
80 grams butter
120 grams almonds
400 grams Sour cream
3 eggs
½ packet Instant pudding (almond flavor)

Preparation steps

1.

Mix butter with flour, salt, sugar, ground almonds and orange zest. Knead into a smooth dough and wrap in plastic wrap. Refrigerate for 30 minutes.

Preheat oven to 175°C (approximately 350°F). Grease springform pan with butter and sprinkle with breadcrumbs. Drain cherries and sprinkle with flour.

Mix 80 grams (approximately 3 ounces) of sugar with cream and butter in a pot. Bring to a boil. Stir in almonds and remove from heat. Add remaining sugar, sour cream, eggs and pudding mix.

4.

Roll dough out on a floured surface and press into springform pan. Spread cherries on top and pour egg-sour cream mixture on top. Bake for 45-50 minutes. After 15 minutes, add almond and sugar mixture to top.

Remove, cool slightly and place on a wire rack. Slice and serve.
