¼ cup superfine caster sugar
½ cup all-purpose flour
1 tablespoon cocoa powder
¼ teaspoon Baking powder
½ teaspoon vanilla extract

Preparation steps

Preheat the oven to 180°C (160° fan) | 350°F | gas 4. Brush a Madeleine tray with melted butter.

Put the egg and sugar into a bowl and using an electric mixer, whisk on high speed for about 3-5 minutes or until the mixture is pale, thick and mousse-like in texture. Sieve the flour, cocoa powder and baking powder over the mixture. Fold in carefully. Add the melted butter and vanilla and fold in gently taking care not to over mix.

Spoon the batter into the Madeleine moulds filling almost to the top. Bake in the oven for 12–15 minutes or until slightly springy to the touch. Try not to overcook or they will be dry.

Carefully remove the Madeleines and place on a wire rack to cool. Sprinkle with a little icing sugar when cold.
