mixed Seed (e. g. sesame, poppy etc.)

Preparation steps

Mix the flour and dried yeast together. In a large bowl, whisk the egg with the salt and oil. Add the flour and stir to combine. Warm the milk with the sugar and gradually mix into the dough. Cover the dough and leave in a warm place to rise until it has doubled in volume (approx. 45 minutes).

Turn the dough out onto a floured work surface and knead thoroughly. Shape into a sausage and divide into roughly 12 equal-sized pieces. Shape each piece of dough into a sausage approx. 15 cm long and approx. 4 cm thick. Join the ends together firmly to form rings, cover and leave to rise for a further 15 minutes or so.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease a baking tray with vegetable oil. Put an oven-proof dish full of hot water in the bottom of the oven.

Bring a large pan of water to the boil and use a slotted spoon to place the raw bagels - in batches - in the boiling water for around 1 minute. Remove from the pan, drain and place on the baking tray.

Brush the bagels with whisked egg yolk and sprinkle with poppy and sesame seeds. Bake in the oven for 30-35 minutes until golden.
