2 Tbsps clarified butter
7 eggs
2 Tbsps grated Cheese (such as Manchego)

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F).

Peel the onion and cut into narrow strips. Peel, wash and thinly slice the potatoes. Heat the butter in a pan and sauté the potato slices over low heat for about 10 minutes, stirring occasionally. Add and the onion and continue to sauté.

3.

Mix the eggs with the cheese and season with salt, pepper and nutmeg. Pour over the potato mixture and bake until firm. Serve to with pickled jalapenos if desired.
