DIY Low-Carb Pancakes

Whether it is with maple syrup and fruit or savory bacon and butter: In many homes across America, pancakes are a regular breakfast tradition. With plenty of sugar and flour in the dough and some cream on top, they quickly become very fattening. Is it possible to make pancakes with less calories and carbs? The answer is yes! EAT SMARTER has developed two phenomenal recipes for low-carb pancakes.

The hard thing with low-carb pancakes is to make a dough that does not fall apart within the pan. And of course, the pancakes should still be fluffy and delicious even without all the sugar and flour. In most low-carb pancakes, protein powder is used, but EAT SMARTER has developed recipes that use only natural ingredients.

Low-Carb Banana Pancakes

Ingredients:

  • 1 ripe banana
  • 2 eggs

Here's how:

Process the ingredients in a blender to make a uniform batter without lumps. Heat a little oil in a pan and pour in a spoonful of batter. Depending on how large you like your pancakes, the dough should make up to 16 (small) pancakes. Bake until golden brown on both sides.

The advantage of this recipe: The pancakes are not just low-carb, they are also gluten and lactose-free. The ingredients combined also only have 277 calories.

Cream Cheese Low-Carb Pancakes

Americans do not just love pancakes, but also cream cheese. Fortunately, the spread is also ideal as an ingredient in low-carb pancakes.

Ingredients:

  • 60 grams/2.11 oz cream cheese
  • 2 eggs
  • 1 tbsp. Stevia (or ½ tablespoon sugar or other sweetener)
  • ½ tsp. cinnamon

Here's how:

Combine all ingredients in a bowl and mix with a hand mixer until the dough is smooth. Let stand briefly. Then, depending on the desired size pancake, spoon dough into a hot pan with a little melted butter. All together the ingredients have about 350 calories.

Of course, pancakes can be eaten by themselves, but they can be even better with some fresh fruit such as:

  • Blueberries
  • Strawberries
  • Raspberries
  • Apples
  • Bananas
  • Apricots
  • Nectarines
  • Watermelon
  • Cantaloupe

Of course, you can also mix the fruit and enjoy a delicious fruit salad with the low-carb pancakes. The pancakes are also great with cottage cheese, yogurt or apple sauce. Maple syrup or nutella can also be used, but add a lot of calories.
