6 Tbsps Orange marmalade
2 Tbsps thinly sliced candied orange
cup butter
cup caster sugar
3 eggs (beaten)
1 ¼ cups gluten-free self-rising flour

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter 6 x 125ml|4 fl oz pudding basins and spread the marmalade and candied peel strips over the bases.

Beat the butter and sugar in a mixing bowl until light, then beat in the egg until smooth.

Stir in the flour and mix well until blended.

Spoon into the basins and smooth the tops. Cover with a lid or a double thickness of pleated greaseproof paper, then with a double thickness of pleated foil (to allow for expansion as the pudding cooks).
5.
Tie securely and place on a trivet or upturned plate in a large pan. Pour in boiling water to come halfway up the basins.
6.
Steam for 40 minutes. Cool in the basins for a few minutes then turn out onto warm serving plates.
