Preparation steps

1.

Rinse the beef under cold water, pat dry and cut into thin strips.

2.

Peel garlic and ginger, chop finely, mix with 3 tablespoons soy sauce and the honey and mix with the meat. Cover and marinate for 2 hours in the refrigerator.

3.

Meanwhile, trim and peel carrots. Rinse snow peas and cut in half diagonally. Rinse spinach and spin dry. Rinse scallions, trim and cut diagonally into rings.

4.

Cook noodles in salted water according to package directions until al dente.

5.

Heat oil in a wok. Fry meat over high heat for 1-2 minutes, then push to the edges of the wok.

6.

Add carrots and snow peas to the center of the wok and stir-fry for 3 minutes. Mix with the meat. Stir in the spinach and scallions and cook until tender, 1-2 minutes.

7.

Drain the noodles, add to the wok and season with remaining soy sauce, salt and pepper. Stir to combine before serving.
