3 Kohlrabi
500 milliliters Vegetable broth
2 pkgs Hollandaise sauce (for 500 ml)
250 grams Whipped cream
4 Tbsps grated Cheese
4 Tbsps lemon juice
1 organic lemon (juiced and zested)
5 Tbsps melted butter
250 grams Salmon

Preparation steps

1.

Peel and rinse kohlrabi, cut into 12 equal slices and chop leaves finely. Heat broth and cook kohlrabi slices for about 8 minutes.

Prepare hollandaise sauce according to package instructions with cream, 250 ml (approximatley 1 cup) of broth, cheese, lemon juice and lemon zest.

Butter baking pan and arrange 4 slices of kohlrabi in it.

Cut salmon fillet into 8 slices. Place 4 fillets on 4 kohlrabi slices and drizzle with a little sauce. Repeat layers, finishing with kohlrabi. 

5.

Sprinkle with kohlrabi leaves and spread with any remaining sauce. Drizzle with remaining melted butter. Bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes. Remove from oven and serve.
