This mache pesto is a a good source of heart-healthy fats from the olive oil.

Mache lettuce is also known as butter or lamb's lettuce.

9 ozs lamb's lettuce
2 garlic cloves
3 Tbsps Pine nuts
3 ozs grapeseed oil (or olive oil)
½ cup freshly grated Parmesan
6 ozs Ricotta cheese
Sea salt

Preparation steps

1.

Rinse, trim, and dry the mache. Peel the garlic cloves, then puree together with the mache, pine nuts, and about half of the oil in a blender. Gradually incorporate the remaining oil, until your desired consistency is reached. Transfer to a bowl, mix with the parmesan and ricotta, and season to taste with salt.

Transfer to a jar, and keep in the refrigerator. The pesto will last 2-3 days.
