- 1 clove garlic (minced)
- salt (to taste)
- ¼ cup Red wine vinegar
- ½ teaspoon dried oregano
- ½ cup olive oil
- freshly ground Black pepper
- 3 handfuls mixed Salad Greens
- 1 head Radicchio (halved; cored and coarsely chopped)
- 1 Fennel bulb (trimmed; cut crosswise and thinly sliced)
In a large bowl, add the minced garlic and a pinch of salt. Mash until it a paste forms. Whisk in vinegar and oregano, add olive oil, whisking to combine. Season with freshly ground pepper.
Add greens, radicchio, and fennel and toss well. Serve immediately.
