For the pastry
6 ozs Pastry flour
3 ½ ozs ground almonds (blanched)
5 ozs cold butter (cut into pieces)
1 egg
1 pinch salt
5 Tbsps sugar
softened butter (for the pan)
For the filling
5 tart Apple
½ lemon (juiced)
2 Tbsps honey
For the crumble
3 ozs Pastry flour
3 Tbsps ground almonds (blanched)
1 pinch Ground cinnamon
3 Tbsps sugar
4 Tbsps cold butter (cut into cubes)
powdered sugar (for dusting)

Preparation steps

1.

For the pastry: Combine flour, almonds, cold butter, egg, salt and sugar and knead quickly into a dough. If necessary, add a little cold water or more flour. Shape into a ball, flatten into a disk and wrap into plastic wrap. Refrigerate for at least 30 minutes.

For the filling: Rinse apples, quarter and core, then into slices. Toss with lemon juice.

Butter tart pan.

Roll out pastry on a floured surface and line tart pan with it, making an edge all around. Spread apples on top and drizzle with honey.

For the crumble: Combine flour with almonds, cinnamon, sugar, and cold butter, then crumble between your fingers. Sprinkle crumble over apples. Bake in preheated oven at 350°F for about 45 minutes or until golden brown.

Let cool and dust with powdered sugar before serving.
